Acacia gum is a plant texturing and coating found in many confectionery and sweets.
Acacia gum is the main ingredient in classic gumdrops and can be used in pharmaceutical confectionery, boiled candies, or pastels.

Acacia gum is the main ingredient in classic gumdrops and can be used in pharmaceutical confectionery, boiled candies, or pastels.
The functional properties of acacia gum improve the texture and thickness of these candies, and when used in combination with sucrose and glucose, act as an anti-crystallising agent. Coatings are a traditional and widespread application of acacia gum, especially for confectionery stores that require a central gumming operation and chocolate panning.
In combination with polyols, acacia gum is very effective in sugar-free coatings. In this particular application, acacia gum is a very important ingredient in sugar-free chewing gum.
