As an emulsifier and stabilizer, acacia gum is used in liquid and powder emulsions. Its film-forming and tension-active properties make it ideal for emulsions of essential oils and powders (flavours), and are useful for stabilizing oil-in-water emulsions prior to spray drying operations.

In the food industry, acacia gum is used to encapsulate fat-soluble substances, essential oils, vitamins, flavors and colorants.
The properties of its bulking agent have a fixed effect on powdered ingredients and dry blends and protect against external pollution.
